I love pizza and I think nothing beats fresh hot homemade pizza. The problem is that all the crust recipes I have seen call for 1-2 hours of raising time for the dough. I typically decide I wanna make pizza about an hour before dinner, no time for rising dough! I tried a bunch of the package crust mixes that don't call for rising and they are okay but expensive and not great. This is the recipe I have concocted for a perfect no rise crust from scratch.
No-Rise Pizza Dough
1 Package Active Dry Yeast (2 1/4 teaspoons)
1 Cup Warm Water (110-115 degrees)
2 Tablespoons Vegetable Oil
1 teaspoon Sugar
1/4 teaspoon salt
2- 2 1/2 Cups All Purpose Flour
Cornmeal (optional)
1 Tablespoon Olive Oil
1 Tablespoon Dried Italian Seasoning
Toppings of your choosing
Heat Oven to 425 Degrees
In a large mixing bowl dissolve yeast in the water.
add oil,sugar,salt and 1 1/2 cups flour
mix until smooth ( I use a kitchen-aid mixer with the paddle attachment on low)
Add 1/2 - 1 cup more flour until a stiff dough forms.
(Will be a bit sticky still, 1/2 cup always works for me)
Flour the counter and place dough on it, cover with bowl. Let sit for 10 Minutes.
Grease pan and sprinkle with cornmeal (optional)
(This recipe will make enough for one 12" pizza pan OR 1 cookie sheet (I use this)
Roll out dough and press into pan to fit.
Pour olive oil onto crust and smooth over, sprinkle with Italian Seasoning.
Bake at 425 for 12-15 minutes till crust is browned.
Add desired toppings.
Bake an additional 10-12 minutes.
